STUDY PROCESSING PROCESS CORN CAKE IN POISIONING BY MOULDY CORN CAKE INHMONG COMMUNITY AT HAGIANG PROVINCE FROM 2006 TO 2014

Abstract

From 2006 to 2014 in the province of Ha Giang have happened 23 cases poisonings mouldy corn cake with 127 people infected, including 51 deaths (death rate was 40.1%). The poisoning is usually caused by eating corn cake madeafter the seventh day. 23 cases poisioning corn cake included 9 cases (47 people infected) were eating corn flour made 11th– 15th day; 7 cases (36 infected) were eating corn flour 7th-10th day. Especially with 3 cases (30 infected) were eating corn flour over 30 days. 100% of poisoning cases are caused by families using cornbread processed according to process 1, processing processes 2, 3 with no cases of poisoning.
