Abstract

Objectives: This study has two objectives as the follows: to assess the status of compliance with regulations on food safetyand some factors affecting of food safety regulations of restaurants in Hung Loi ward. , Ninh Kieu district, Can Tho city in 2021. Methods: This is a cross-sectional descriptive study, combining quantitative and qualitative method. The quantitative study selected all 220 restaurants to assess compliance with food safety regulations. Qualitative research interviewed 11 subjects, including: Leaders in charge of food safety management (1 person at city level, 2 people at district level, 2 people at ward level) and 6 people who are establishment owners. Main findings: The percentage of restaurants that comply with food safety regulations is only 36.8%, of which: the rate of meeting the criteria on conditions of facilities, conditions of equipment and tools at the restaurants. food according to the regulations of the Ministry of Health is very low at 65.9% and 52.3%, respectively; Processors at restaurants with common practice achieved 51.4% of food safety and correct knowledge of food safety achieved the highest rate of 74.5%. The compliance with food safety regulations at the restaurants includes the processor having knowledge about compliance with the conditions to ensure food safety; communication, communication, inspection and supervision on food safety is carried out regularly every year; sanctions for violations are sufficiently deterrent.
