Abstract

A cross-sectional descriptive study at instant ice production enterprises in Quang Binh province in 2022 was carried out to describe the current status of food safety conditions and assess associated factors. The results showed that 31% of the instant ice samples were infected by microorganisms and 40.5% of the production places were assessed to be not meeting the food safety requirements including the packaging (35.7%), human conditions (26.2%), equipment (7.1%) and factory conditions (4.8%). There was a statistically significant correlation between the rate of microbial infection and food safety condition factors. Production places not meeting food safety requirements in terms of general conditions, factory conditions, workers conditions, and food storage conditions, the risk of products being contaminated with microorganisms were 0.275 - 30.375 times more likely to be those that meet the food safety requirements of these conditions.
